Advanced Taskbar Properties

Clicking the Advanced tab allows you to alter the appearance and options on the Start menu and its Programs sub-menu.

Items can be added, removed and rearranged as necessary using this dialog. Note that removing items from the Start menu only deletes the shortcuts to them, and does not uninstall the application (you receive a warning to this effect when using Windows XP), so it is fairly safe to play around with these options.
